Easy Saag Paneer

Ingredients

  • 1 tsp turmeric

  • 2 1/4 tsp salt

  • 4 tbsp oil

  • 1 block Paneer Cheese (approx. 12-14 oz), cut into 1-inch pieces

  • 1 package frozen chopped spinach

  • 1 onion, diced

  • 6 cloves garlic, diced very fine

  • 3/4 tsp garam masala spice mix

  • 2 1/2 tsp ground coriander

  • 1 1/2 tsp cumin

  • 1 tsp ground ginger

  • 3/4 cup plain yogurt

Instructions

  1. Mix 3 tbsp oil, 1 1/4 tsp salt and turmeric together. Add Paneer and mix thoroughly. Set aside.

  2. Thaw spinach if you have not done so, yet. Microwave for 3-4 minutes and break up with your hands of food processor. Squeeze most of liquid out of spinach. Set aside.

  3. Place nonstick skillet over medium heat and add Paneer, heating for 2-3 minutes. After bottom is golden brown, flip paneer and sauté for another 1-2 minutes. Place Paneer pieces on plate.

  4. Using same pan, add 2 tbsp oil, and onions and a pinch of salt.

  5. Sauté on medium/low heat for approx. 7-10 minutes.

  6. Add garlic and sauté another 5 minutes.

  7. Add spice blend of garam masala, coriander, cumin, ginger and remaining 1 tsp salt. If pan looks to dry, add some water. Cook on medium heat for approx. 5 minutes.

  8. Add spinach and mix thoroughly. Cook another 3-5 minutes.

  9. Turn off heat and add yogurt in increments, thoroughly combining between.

  10. Finally, add Paneer, you can turn heat back on low to heat the cheese back up.

  11. Serve over a bed of rice and ENJOY!
