I LOVE garlic. I add it to almost everything (excluding most desserts).
Did you know that the ancient Egyptians worshipped garlic as a god and even used it as currency? Preserved garlic cloves were found in the tomb of King Tut!
Here is one of my favorite recipes celebrating garlic. A super simple pesto recipe using lots of garlic. I started making a lot of my own pesto this past winter when we had a lot of extra basil from our mini-hydroponic greenhouse. We just couldn't use the basil it was growing fast enough, so every once and a while, I harvest a bunch and make pesto. I freeze the pesto in individual freezer safe baggies to pull out whenever we crave pesto.
Super Garlicky Pesto Recipe
Ingredients
2 cups fresh basil
2 tbsp pine nuts, walnuts or pecans (I use pecans because that's what I often have on hand)
4-8 large garlic cloves (your preference)
2 tbsp lemon juice
1 tsp salt (more or less to taste)
pinch of pepper
1/2 cup olive oil
1/2 cup parmesan cheese
Instructions
Using food processor or blender, puree basil, nuts, garlic, lemon juice, salt, pepper. Blend until well pulverized and incorporated.
While blending, drizzle olive oil in, more or less can be used based on what consistency of pesto you want.
Last, add parmesan and blend well.
ENJOY on pasta or garlic bread. Mix with mayo to make an aioli. Use in your omelette for super decadence. So many ways to use this flavorful sauce!
