Happy National Oatmeal Cookie Day!

Not everyone loves an oatmeal cookie. I mean, they can almost be too healthy. So, here is my recipe for a really delicious version. And you can either add raisins or chocolate chips to give them a little flavor boost.


Oatmeal Cookies

(with Raisins or Chocolate Chips or both!)


Ingredients

  • 3 eggs, beaten

  • 1 cup raisins (optional)

  • 1 cup chocolate chips (optional)

  • 1 tsp vanilla

  • 1 cup butter

  • 1 cup brown sugar

  • 1 cup granulated sugar

  • 1 tsp salt

  • 1 tsp cinnamon

  • 2 tsp baking soda

  • 2 1/2 cups AP flour

  • 2 cups oatmeal

Instructions

  1. Preheat oven to 350F

  2. If using raisins, in bowl, combine eggs, raisins and vanilla, making sure raisins are covered with eggs. Cover bowl and soak for 1 hour.

  3. If not using raisins, just combine eggs and vanilla.

  4. In large mixing bowl, cream butter with brown and white sugars thoroughly

  5. Add salt, cinnamon, baking soda and flour, mix thoroughly.

  6. Blend raisin/egg mixture (and/or chocolate chips) and oatmeal into mixture.

  7. Once fully incorporated, drop dough onto greased cookie sheet by large spoonfuls.

  8. Chill for at least 30 minutes.

  9. Bake cookies for 10-12 minutes.
