Happy 1st of May and National Lemonade Day! There is just something special about that lovely, tangy, sweet Lemonade flavor to quench your thirst on a hot day!
And staying on the lemon flavor, have you ever tried to make Lemon Curd? It sounds complicated, but is actually so very easy to make.
Check out this Lemon Curd recipe. I like to pair it with bright, yellow macarons and a vanilla buttercream.
5 egg yolks
3/4 cup sugar
Zest from one lemon
1/2 cup lemon juice
4 tbsp butter
1/8 tsp salt
Combine egg yolks, sugar, zest, lemon juice and salt in a double boiler over medium heat.
Whisk 5-7 minutes until noticeably thicker.
Remove from heat and add butter.
Whisk until incorporated, strain and refrigerate.
