It's National Peanut Butter Cookie Day!
My daughter makes the best Peanut Butter Chocolate Chip Cookies! Here is her recipe - sooooo delicious!
Sophie's Peanut Butter Chocolate Chip Cookies
Ingredients
2 1/2 cups AP flour
1 tsp baking soda
1 tsp baking powder
1 tsp salt
1 stick (1/2 cup) butter
1 cup creamy peanut butter
1/2 cup sugar
1 cup packed brown sugar
2 eggs, plus 1 egg yolk
2 tsp vanilla extract
2 cups chocolate chips, semi-sweet, white or milk chocolate (whatever you have!)
Instructions
Preheat oven to 350F and line baking sheets with parchment paper.
In bowl, whisk together flour, baking soda, baking powder and salt, set aside.
Mix peanut butter with melted butter, combine until smooth.
Stir in sugar and brown sugar until completely combined.
Add eggs and yolk, one at a time, mixing thoroughly.
Add vanilla.
Gradually add the flour mixture.
Stir in chocolate chips - dough will be a little loose, that ok.
Make dough balls about 3 tbsp in size and drop on baking sheet. If cookie crumbles, just press back together, and press in those chocolate chips. Press down slightly.
Bake 11-13 minutes, until golden brown.
