National Rotisserie Chicken Day!

Rotisserie chicken is a game changer. You have cooked, moist and delicious chicken to eat on it's own or to add to a meal for a super fast protein.


One of my favorite meals using rotisserie chicken is...


Super Easy Green Sauce Chicken Enchiladas


Ingredients

  • 2 cans green enchilada sauce (spice level up to you)

  • 1 pack of 10 medium size flour tortillas

  • 3 cups Monterey jack, cheddar cheese combo

  • 1 can refried beans

  • 2 cups shredded rotisserie chicken

  • Additional topping of your choice: sour cream, salsa, cilantro, guacamole, lettuce etc.

Instructions

  1. In large bowl, mix 1 can enchilada sauce, 2 cups of cheese blend, refried beans and shredded chicken.

  2. Spray a 9"x13" casserole dish with non-stick spray. Pour 1/3 of can of enchilada sauce in bottom of dish.

  3. Take one tortilla, put 1/10th of chicken mixture in and roll, placing in casserole dish, seam side down.

  4. Repeat with additional tortillas.

  5. Pour the rest of your green enchilada sauce over filled tortillas.

  6. Top with remaining 1 cup of cheese blend.

  7. Bake covered at 350F for 25 minutes, then uncover for an additional 5 minutes or until bubbly and cheese is golden brown.
